Separation of Neutral Lipid Classes in Green Beans by High-Performance
Liquid Chromatography

A high-performance liquid chromatographic method that employs refractive index detection, a silica column as the stationary phase, and an isocratic mobile phase (n-hexane2-propanolacetic acid, 100:0.14:0.07, v/v/v) is used to determine the neutral lipids in 15 samples of whole green beans (Phaseolus vulgaris L.). Three lipid classes are identified: the most abundant class comprised nonpolar lipids (sterol esters, carotenoids, and waxes); the next comprised fatty acids; triglycerides formed the least abundant class.
